Okra with Lamb sits in the pot from the first shimmer of olive oil to the final flourish of lemon juice and parsley. From our London kitchen we trim the fresh green okra by hand so each pod stays whole and firm. Halal lamb is cut into generous pieces and browned gently, releasing its flavour before the chunks of okra join in. A sauce of chopped tomatoes, garlic and fragrant Lebanese spices envelops the ingredients. The lamb simmers until it is tender and yielding while the okra absorbs the tomato bath and softens just enough to create a delightful contrast between the meat and the vegetable.
