Fattet Hummus begins with the heart of Lebanese cooking, humble chickpeas simmered slowly until soft and golden. They form the base of a dish that feels both luxurious and familiar, layered with toasted pita pieces that soak up every flavour. Over this goes a sauce made by hand, blending creamy yogurt with nutty tahini, crushed garlic and a bright squeeze of lemon juice. The aroma of olive oil and cumin fills the kitchen as it’s finished with toasted pine nuts and a scatter of fresh parsley.

Each portion is assembled fresh, never reheated, so every bite holds the contrast between crisp bread and smooth chickpeas. The warmth of the beans meets the cool tang of yogurt, and the richness of tahini brings everything together. Chickpeas, tahini, lemon juice, garlic, olive oil, yogurt, toasted pita bread, salt, cumin, pine nuts, parsley.

Serving size: One kilo serves around five to six guests.
