Malfouf Salad

Malfouf Salad begins in our kitchen where each head of cabbage is finely shredded by hand, never rushed through a machine. The leaves are tossed gently with freshly squeezed lemon juice, olive oil and a touch of garlic to let the natural sweetness of the cabbage shine through. Fresh parsley and mint are added for brightness, and a pinch of salt brings everything into harmony.

At Awafi Foods in London we prepare this salad with the same care found in every Lebanese home kitchen. The cabbage is crisp, the dressing balanced, and the aroma faintly citrusy from the lemon. Each bite feels fresh and alive, designed to complement the smoky flavours from our charcoal grill or the warmth of pastries baked in our stone oven. Nothing here is pre-made or stored for days.
